Message: | Pan-fried is typical - they are a small and thin fish and easy to overcook. A brief flip in a wee dab of grease and they're done. Brings back memories of my teen years fishing at the Manhattan Beach pier, not particularly because I liked to eat the result but because I wanted an excuse to hang out with unsavory characters. After too many meals of sand dabs I stopped baiting the hook and just stood around, drank beer and talked with the other fishermen.
