Why not do it yourself? Unless you live in an apartment, it's entirely feasible. For God sake's I've even seen deep frying turkey kits at Ralphs!

I have now done about a half-dozen. It's not that big a deal. However, a word to the (budget)wise. The amount of peanut oil required costs about $35.00 at places like Smart and Final or Costco. That means, unless you can find a way to effectively reuse this oil, the deep-fried bird that you bought raw on sale for 99 cents a pound is now a $50.00 entree.

There is some good news, however. Costco sells some kind of mysterious frying vegetable mixture for less than $10.00 in a large box. (Enough for a second turkey later, if you wish.) It is, no doubt, the same thing most of the ethnic restaurants we love use to fry in but, it is not as elegant by far as peanut oil. Nonetheless, I consider it a very reasonable compromise.

The other thing, and I think it's a big one, is that you want a deep fried turkey freshly fried. Apart from the wonderful drama of bringing it out of the fat and parading it for your guests, I've noticed that the left over turkey, while good, is nothing like what I had served the night before.
