They're absolutely no-frills, but I find myself returning often to the pancakes at Rae's in Santa Monica. While the rest of the experience (including the prices, mercifully) screams "cheap diner," I find the pancakes surprisingly light and nice alongside the more cholesterol-ified items on the plate.
 
John O'Groats on Pico (next to the Rancho Park golf course) is another option, though I've only been there once (the weekend brunch crowds are murder). More-frills kinds of pancakes, which may be more along the lines of what you're looking for.
