The Pro-Chef series mirrors the CIA program except that instead of 40 hours on sauces, it is 4 hours. It is sort of an abbreviated version that runs for 20 weeks. The biggest downside I experienced was that there was not enough emphasis on knife work and their equipment is getting a bit old. Not enough of a detraction if you know that going in... |
