I attended the Pro-Chef Series at the Epicurean and can recommend it for those who are working. It is unfortunate for you that you are in Huntington Beach as that is quite a haul. The Pro-Chef series mirrors the CIA program except that instead of 40 hours on sauces, it is 4 hours. It is sort of an abbreviated version that runs for 20 weeks. The biggest downside I experienced was that there was not enough emphasis on knife work and their equipment is getting a bit old. Not enough of a detraction if you know that going in...
