The hanger steak at Lunaria is legendary but even though it is the essence of beefy flavor and perfectly medium rare, I find it chewy. Skirt steak and flap meat are also too chewy for me. I cut it across the grain or it would not be edible at all. The most authentic Fajitas are made of this meat too ( I believe). I like tender. What am I missing?
