Subject: oaxacan 'cecina' From: nils@matadorrecords.com (Nils) Posted: August 30, 2001 at 15:13:12 In Reply To: Re(2): more taco clarifications Posted by Larry on August 30, 2001 at 09:17:09
Message:In Oaxaca, what they call 'cecina' is pork, and what much of the rest of Mexico calls 'cecina' (beef) Oaxacans call 'tasajo.' Both are prepared similarly, the continous ribbon of very thin meat, usually salted & air-dried, often rubbed with seasoning or at least lime. YUmmmmmmmmmmmmmmmmmmmmmm.
