Here are a few to get you started:
 
For Indian in HB, try Bukhara on Edinger between Golden West and Beach, across from the Huntington Beach mall. Food is always excellent, as is the service.
 
For Italian, there's Mangia Mangia, on Golden West just south of Edinger (in the Home Expo center). Also in that center is DeSimone's deli for subs; not open past 7 or 8 pm. Also, one of the John's Philly Grilles is there, a few doors from Mangia Mangia.
 
Coach's on Main Street HB 2 or 3 blocks up from PCH has good Greek/Mediterranean food.
 
Cafe Lafayette on Main Street in Old Town Seal Beach (PCH & Main) is great for breakfast and lunch; haven't tried the dinner menu.
 
Mario's for Mexican food, Edinger & Springdale or at 5 Points Center (intersection of Beach, Ellis, & Main). Traditional; their refried beans taste a little too bacon-y for my taste.
