the trick is to char the outside... black and crispy yet leave the inside rare.... i just cooked a new york steak tonight.... inside... i start with a good marbeld piece of meat.. press crushed back pepper into the steak then add some colemans powdered mustard rubbed on both sides... meanwhile take a ribbed cast iron grill style pan if you have one or just a good cast iron skillet if you don't and cover the bottom with good coarse rock salt... heat the pan till it's super hot... almost glowing and the salt is turning brown... then fry that steak.... it'll be chared on the outside and nice and rare on the inside... be sure and disconnect the smoke detector before cooking... i promise you a delicous steak....
