Everything you mention is right on, except that in my experience, the fried rolls are called spring rolls (never seen them called eggrolls), and the fresh rolls are called summer rolls on many Vietnamese menus. Sometimes the summer rolls may be called fresh spring rolls or something to that effect. I don't think there's a standard for the English terms, so this may be where the confusion lies.
