There are so many vietnamese variations of coconut and beans and bits of fruit and other sweets in cold or iced dessert drinks. One of my favorites is made with what looks like black eye peas. A little earthy in flavor, not so sweet as others. Those folks with more of a sweet tooth would might like the variation made with corn. And, as you said, the 3 color ice dessert varies greatly in composition from restaurant to restaurant.
 
In the past I had great luck with the variety and freshness to be found on weekends at some Vietnamese grocers. hmmm. when the weather warms up I am going to see if I can scout up a new place/source since I am recalling what I used to get years ago in New Orleans.
