At Trader Joe's, their Chicken Enchiladas in the frozen food section are very good, and a meal at $1.79. Their Tamales are also quite tasty. If you want to go *really* cheap and easy, they have two 'Add hot water to the cup' items for 79 cents that are decent: Tortilla Soup and Enchiladas Ranchero. And if you are going to Costco, you cannot beat the Rotisserie Chicken. It is amazing and at 4.95 will last for a number of meals. (See earlier thread) Vons often has Lean Quisine items on sale for 2 or 3 dishes for 5 or 6 dollars. The Lean Quisine Enchiladas Suiza are good.
