When I first met my wife-to-be, she and her mother were both regular patrons of a CHAIN of such places in Souuth LA/North Orange Counties called "Skinny Haven".
 
I suspect these places went under as regular restaurants in Southern California began doing highly So.-Cal.-adapted menus which actually tasted good. (try going into a breakfast place in Carolina, or in Scotland, and asking for a "tofu scramble" if you doubt the regionality of the phenom.)
