awww, crap! i just walked by some "flap meat" the other day (i think at Food4Less, or maybe Sam's Club?). i'd never heard of it before, but did note the "grain" and thought it might make a good experiment some day...
 
now i gotta go back and retrace my steps. thanks for the info!
 

p.s. my last "experiment" was grilled skirt steak marinated in bulgogi sauce and minced green onion. i highly recommend it!
