I sell Omaha Steaks to individuals for a living, so this thread is of great interest to me. It just pains me to see quality beef turned into ash. For people extremely concerned about the bacteria thing, if you cook your beef to 160 degrees F internal temperature you'll kill anything that could kill you. Good barbecue stores usually carry a range of temperature gauges.
