I too have found hangar steaks at Costco, the Glendale branch. They were called flap meat steaks, I think, and they were next to the flank steak. I was looking for skirt steak, and that's kind of what these things looked like, but I'd never heard of them. I asked the butcher and he said they were "just like skirt steak." So we bought them and as soon as I got home, I looked up "flap meat" in my beloved copy of "How To Cook Meat." To my amazement, it's another name for hangar steak or "onglet." We marinated them in a recipe from the above book (which I cannot recommend enough), then grilled them. Scrumptious!!
