Gluten. And fu zhu are also made of gluten. BTW great Beijing food including Shuan Yang Rou (Instant-boiled mutton/lamb with strong sesame dipping sauce) at Deerfield Garden (Lu Yuan) at Deerfield plaza, se corner of Atlantic and Garvey in Monterey Park.
