In one study, rats with olive oil in their diet had lower levels of fibrinogen, a compound that promotes clotting. The rats did not have lower levels of blood coagulation factor VII. (abstract (cache)) But studies in humans found that that men who ate a diet rich in olive oil did have lower levels of blood coagulation factor VII (~20% less).
