Cashew Vegetable Stir-fry

Ingredients:
1 tspn canola oil
1 medium onion, sliced
2 cloves garlic, crushed
1 tspn freshly grated ginger
100 g baby corn, halved lengthwise
1 red capsicum, sliced
125 g snow peas
1 cup bean sprouts
1 bunch baby bok choy, chopped
1 tbspn each of soy, sweet chilli and
vegetarian oyster-flavoured sauce
3⁄4 cup raw cashews
Instructions:
1. Heat oil in a wok or frypan. Stir-fry onion and garlic for one minute.
2. Add ginger and sauté for another minute.
3. Stir through capsicum, snow peas and corn; stir-fry two minutes.
4. Add remaining ingredients and stir-fry for two minutes or until heated through.
5. Serve on steamed rice.
