Cashew Vegetable Stir-fry

- Preparation Time: 15 minutes - Per Serve: 1060 kJ (250 cals). Protein 10 g. Total fat 15 g. Saturated fat 2 g. Carbohydrate 17 g. Total sugars 8 g. Sodium 600 mg. Potassium 690 mg. Calcium 60 mg. Iron 3.5 mg. Fibre 6 g.
- Cooking Time: 10 minutes  
- Serves: 4 balls  

Ingredients:

Instructions:

1. Heat oil in a wok or frypan. Stir-fry onion and garlic for one minute.
2. Add ginger and sauté for another minute.
3. Stir through capsicum, snow peas and corn; stir-fry two minutes.
4. Add remaining ingredients and stir-fry for two minutes or until heated through.
5. Serve on steamed rice.
