Most small markets review based on one or two visits for two to four persons, based on the idea that "If you're open for business, you're open for a review." How many times you need to go back to turn in a fair evaluation depends on how many different cooking styles are at the restaurant, and on things like how different their lunch and dinner menus are. A barbecue place, or a place specializing in a single cooking style, or working in a defined cultural context? One visit should do it. A place with a high level of innovation and items on the menu cooked in many different ways? Two visits, more if you can convince the publisher.
