Never thought about this, but I guess restaurants don't get the grace period that live performers do -- in other words, there's no dress rehearsal.
 
I once wrote a review of a performance art piece, only to have the perf artist call my editor and scream bloody murder until the review was pulled. The artist claimed that I had seen a rehearsal, and not the real show. (Of course I argued that in the case of performance art this was splitting hairs, but anyway...) Hard to imagine a chef making the same call: "Excuse me, Mr/Ms Editor, but that seared pate appetizer was only a practice run, so you can't criticize it for being rancid..."
