I think the truth is somewhere in between. I know a couple restaurant critics, and they make a largely successful attempt to stay incognito. Make their reservations under pseudonyms, etc... Then again, they are not the most powerful critics in town. It's probably more difficult for the highest profile critics to stay undercover. NY Times' Wm Grimes, for example, occasionally complains about being recognized by maitre d's in his restaurant reviews...
